Monkey's Foolproof Fudge

3 6-ounce pkgs. semi-sweet chocolate chips (about 3 cups)

1 14-ounce can sweetened condensed milk

1 dash salt

1/2 to 1 cup chopped nuts

1 1/2 t. vanilla extract

In heavy saucepan, over low heat, melt chips with condensed milk and salt. Remove from heat; stir in nuts and vanilla. Spread evenly into a wax paper lined 8 or 9" square pan. Chill 2 hours or until firm. Turn fudge onto cutting board and cut into squares.

Microwave instructions: In 1 quart glass measure, combine chips with condensed milk and salt. Cook on 100% power (high) 3 minutes or until chips melt, stirring after each 1 1/2 minutes. Stir in remaining ingredients. Proceed as above.

First of all, I used mostly milk chocolate chips because I had an open bag to get rid of. Second of all, sweetened condensed milk could turn hamster droppings into candy, but good fudge starts with good chocolate so don't cheap out on your main ingredient. Thirdly, chopped raw almonds rule.

I made this in about five minutes and I now have more fudge than I know what to do with. I think I'll give some to my landlord's husband, he works hard and needs a lot of chocolate.

I give this recipe an A-. It's absolutely as good as See's fudge and a lot cheaper, the only thing it's missing is that brown-sugary texture that I'm craving right now. If you have a slightly more granular fudge recipe, let me know! The Fussy Kitchen will test it for everyone's benefit!
